Let me share a healthy and really yummy snack you can prepare easily for yourself and the kiddos… using cherry tomatoes.
Health Benefits of cherry tomatoes (adapted from healthyeating.sfgate.com):
- Contains Vitamin B-6 which helps your body metabolize protein and supports cognitive development and brain function. The nutrient also aids in producing red blood cells and immune function.
- Contains Vitamin A which keeps your eyes working properly. The vitamin also aids your body in producing white blood cells and keeps your heart, lungs and kidneys working properly.
- Contains lycopene, an antioxidant that lowers your risk of certain diseases caused by cellular damage, decreases your risk of cardiovascular disease and cancer.
- Contains compounds that might offer protection against osteoporosis, skin damage caused by ultraviolet light and brain disorders.
Ingredients: Cherry tomatoes and preserved orange peel (chopped finely).
Use a small knife to slit your cherry tomatoes twice, halfway through the tomato (do not slice open the tomato).
Stuff the chopped orange peel into the tomato.
Eat it NOW or chill it and eat it later when you are craving for a snack!
